La Franc-Comtesse: a typical gastronomic speciality from Franche-Comté
Over the years, culinary experts and chefs in the Franche-Comté have met to showcase their expertise through the creation of new delicacies which highlight typical products from their region.
Created by imaginative master pastry-chefs, and subsequently adopted by the region's master bakers, the Franc-Comtesse, a delicious Christmas log created in 1998, is the result of close collaboration between the artisans of the Franche-Comté.
This delicious Christmas log (bûche de Noël), which stands on a shortcake biscuit base, consists of chocolate mousse flavoured with raspberries and a creamy vanilla centre with slivers of raspberries.
Given that the recipe is still a well-kept secret, the only way to enjoy this wonderful dessert is to pay a visit to the region!
