Specialities of the Mâconnais


The Snail, symbol of our region, will be served as a starter and so could the andouillette mâconnaise, Bresse salad, pork scratchings, eggs in red wine sauce…

Then fish may follow: pikeperch, perch, crayfish, without forgetting the silurid and fried gudgeon! Not to be forgotten, Burgundy is a high quality poultry producer region and local Charolais beef and mutton are very delicate meats.

Cheese from the Saône-et-Loire county is ranked first among the goat cheese milk production with the “Chrevroton from Mâcon” and the “Boutons de culotte”.

For people with a sweet tooth, desserts such as The “Mâconnaises wafers”, exclusively made in Mâcon, with a slight flavour of caramel, lemon and vanilla have been around for several centuries! The “Bouchon Mâconnais” (marc brandy chocolates) and the “Idéal Mâconnais” (meringue with almonds, crushed nougatine and butter cream) will definitely delight your taste buds.

Finally, all these tasty treats are best enjoyed while sampling some of the finest Macônnais wines who offer a wide range of specialities: the Mâcon white, fine and elegant wines are elaborated from the Chardonnay vine (name of a local village) with the appellation of Mâcon-Village. Among these wines, the Pouilly Fuissé, known throughout the world, the Saint Véran, drier and fruity and the Viré-Clessé became famous. Stemmed from the black Gamay vine with white juice, the Mâcon red wines with a beautiful bright red colour will surprise you with their freshness and their flavours.
