Lip-smacking Cassoulet

The Cassoulet – a spicy, meaty, unctuous and utterly mouth-watering stew with haricot beans – is one of the most famous specialities of the region and there are plenty of restaurants dishing it up in Toulouse. Most versions served here contain the eponymous Toulouse sausage – and you’ll find plenty of cosy restaurants where you can warm up with a comforting bowl.

30 open air markets

There’s loads of choice for a spot of mooching at a market in Toulouse. One of the best is the atmospheric more than 100 year old Victor Hugo covered market, with its 100-plus active stalls – a great place for foodies to discover the local cheeses, charcuterie, wines, herbs and the freshest fruit and veg.

On a Sunday morning don't miss the picturesque marché held around the Eglise St Aubin, it's a "bobo" (bohemian bourgeois) style affair with clothes, flowers, spices and great produce on offer - it’s like a village within a village.

Gourmet city

With 9 Michelin-starred restaurants in Toulouse metropolis and over 1,700 places to eat, the city is known as one of the country’s best served in terms of restaurants. Every year Toulouse throws itself into the Fête de la Gastronomie a fabulous rendezvous for lovers of good food and festivities.

Bake my day

Try a local speciality cake - Le Fenetra, a typical “gateau Toulousain” made from candied lemons and almonds, one of the best-kept secret recipes of the Occitanie region. You’ll find it in specialist bakeries in Toulouse.

Local brandy

Perhaps the best loved of all brandies, Armagnac is produced at the heart of nearby Gascony, west of Toulouse. Its unique ingredients and artisan production process give it its wonderful aroma and flavour – it’s the perfect accompaniment to desserts, and is also typically drunk after meals as a digestif. Head to a wine bar for a tasting… you’ll thaw out the winter chill in minutes.

 

Around and about in Haute-Garonne

Wine has been cultivated on the stony terraces of the Haute-Garonne since the 13th century. The red and rosé wines of Fronton are designated Protected Designation of Origin (PDO), and are truly delicious thanks to the microclimate, the presence of gravelly land and a unique grape variety, the Négrette. Take a half day tour organised by the tourist office and visit the House of Wine and Tourism in Fronton, located in the heart of the vineyards, in the remarkable setting of the Château de Capdeville.

Visit the Saturday morning market of Revel, classified as one of the 100 most beautiful in France, it’s held in a stunning 14th century building.
